This series is brought to you by Pura Cepa, a project focused on innovation and sustainability in the processing of coffee, using techniques borrowed from winemaking.


One More Thing: 
When one of coffee’s most exciting varieties, Sidra, meets innovative processing, you know it’s going to be good. Meticulously chosen ripe cherries undergo anaerobic fermentation in sealed tanks, then transition to a drying room for 5-18 days, where cherries are inoculated with Pura Cepa's consortium of micro-organisms. This technique borrowed by the wine industry results in amped-up flavour (read: notes of peaches and clementine).
